Cured meat – Silvano Mori – Torniella
An artisan producer of cured meats, Silvano Mori is based in Torniella, an ancient mediaeval village in the hills of the High Maremma, Tuscany. Founded in 1880, the company takes enormous pride in the authentic traditions of its craft, passed down from generation to generation. The company is specialized in the production of salami, ham and sausages from pork and wild boar, prepared according to traditional Tuscan techniques, in the belief that the finest products can only come from the very finest meat. The fresh, dry air of the Marremma hills is another fundamental component of the production. Our products are imbued with the genuine flavors, knowledge and tradition of times gone by.
Starting out as a high-class family butcher, Silvano Mori decided to focus on more highly specialized, quality products and to this end, has revived long-forgotten recipes and traditional production processes.
His work has always been founded above all in the belief that everything starts with the selection of meat of exceptional quality.
While the firm has remained small - everything we make is still strictly handcrafted by members of the Mori family – we have made quite a name for ourselves in Italy and throughout Europe.
They use a combination of traditional craft and the latest machinery to produce the most delicious cooked meats, salami, sausages and hams. They produce about 2000 kg a week of a wide range of meats, from “finocchiona” a wild boar ham, to different types of salami and sausage, as well as lardo and pancetta; each flavored with different herbs, pistachios, wine, mushrooms or truffles from Alba.
Naturello is our line of products made without coloring or preservatives.
The meat comes from carefully selected farms where the animals are fed with GM-free feed.
In our NATURELLO line we use only the most traditional ingredients such as salt, pepper and garlic.
On request, all our products are available in the NATURELLO line, which means you can be sure that they are totally natural.
