Cold cuts tasting in Florence or at your location
The Cinta Senese pig is a breed with an ancient history, a breed at one time widespread in the hills of Siena. It has a dark-coloured coat, with a band of white hair on its chest.
It is a very resilient animal, and is physically a little smaller than a normal pig. Originally bred by the Romans, images of this animal can be found in a fresco dated 1338, in the town hall of Siena. In fact the Cinta Senese was in danger of becoming extinct, but in recent years this has been avoided, because it’s an easy animal to feed, and is highly desired because its lean meat, and delicate taste. It has proved to be particularly suitable for the production of cold cuts and salames, and tasty, easily digestible sausages, as well as for its fast maturation, and reduced need for salting.
